Then simply contact the people in charge of the activity, allowing the recipient (in this case your gorgeous girlfriend) to book a time that's great for them.

If your lady loves to sing, for example, you could book in a professional quality recording studio session to record a duet with her, or if she loves the theatre it's easy to grab a gift experience which includes dinner and tickets to see a show in London's glamorous West End, then with a simple phone call it can be set up for any night she likes. If you really want to knock her off her feet you could accompany the gift experience with a small present that will remind her of the day too.
