Bake: Buttermilk, Blueberry & Banana Loaf

A deliciously moist and moreish treat that's perfect with a steaming hot cup of tea!

There’s nothing more satisfying than picking up a steaming hot cup of tea and a delicious piece of cake and settling down for a good natter with a friend, is there? When we spotted this recipe on Kate's blog, This.Is.What.I.Do, we had to share it with you. The next time you have a catch-up with your best pals booked in, give this scrumptious recipe a go!

Kate's recipe makes four mini loaves so it's ideal for days when you have friends or family coming over (or to keep in a tin and enjoy all by yourself!). We also like this recipe because it contains quite a lot of fruit, which means it definitely counts towards our five a day, right?!

Let's get cooking!


Preheat oven to 180 degrees (fan), grease 4 mini loaf tins with butter.


In a bowl combine baking powder, flour, baking soda and salt.


In a different bowl, gradually mix butter and sugar together, then add in the eggs, buttermilk and vanilla extract. Mash up the bananas and add to the bowl, mixing the batter until smooth.


Gradually add the flour mixture and beat the batter until all of the ingredients are combined. Gently stir in the blueberries.


Scoop the batter into the greased tins and place into the oven for 35 minutes or until the tops are golden and bouncy. Remove from the oven and allow your loaves to cool on a wire rack.

Top tip: Serve with a cup of steaming hot tea!

What will you need?

  • 3 ripe bananas
  • 200g blueberries
  • 2 large eggs
  • 224g plain flour
  • 1tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 200g white sugar
  • 1/2 tsp vanilla extract
  • 120g butter
  • 60ml buttermilk

I tried this recipe at the weekend. It was delicious and really moist! Great with a cup of tea.
